- 1 prime rib roast (5–7 lbs)
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon paprika
- 1 tablespoon dried thyme
- 1 cup beef broth
Instructions
- Remove the prime rib from the refrigerator and let it come to room temperature for about 1 hour.
- Preheat your smoker to 225°F.
- Mix the salt, pepper, garlic powder, onion powder, paprika, and thyme in a bowl.
- Rub the spice mixture all over the prime rib.
- Place the prime rib in the smoker, fat side up.
- Smoke for about 4-5 hours, or until the internal temperature reaches your desired doneness.
- Remove from the smoker and let it rest for 20 minutes.
- Slice and serve with beef broth.
