Instructions
- Preheat your smoker to 225°F.
- Mix salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary in a bowl.
- Rub the olive oil over the prime rib roast.
- Apply the spice mixture evenly on the roast.
- Place the roast in the smoker and cook until the internal temperature reaches 130°F for medium-rare.
- Remove the roast from the smoker and let it rest for 30 minutes.
- Slice and serve.
