Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • Wood chips for smoking (hickory or applewood recommended)

Instructions

  1. Prepare your smoker according to the manufacturer’s instructions and preheat to 250°F (120°C).
  2. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper (if using).
  3. Pat the chicken dry with paper towels, then rub the spice mixture all over the chicken, ensuring to coat under the skin as well.
  4. Place the chicken in the smoker, breast side up. Add wood chips to the smoker box according to the manufacturer’s instructions.
  5. Smoke the chicken for about 3-4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  6. Once done, remove the chicken from the smoker and let it rest for 15-20 minutes before carving.

Notes

  • For best results, brine the chicken in a saltwater solution for a few hours before applying the rub.
  • Experiment with different wood chips to find your preferred flavor.
  • Leftover smoked chicken can be used in salads, sandwiches, or as a topping for pizza.
