This smoked chicken recipe yields tender, juicy meat infused with a smoky flavor, perfect for any barbecue or outdoor gathering.

- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- Wood chips for smoking (hickory or applewood recommended)
Instructions
- Prepare your smoker according to the manufacturer’s instructions and preheat to 250°F (120°C).
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper (if using).
- Pat the chicken dry with paper towels, then rub the spice mixture all over the chicken, ensuring to coat under the skin as well.
- Place the chicken in the smoker, breast side up. Add wood chips to the smoker box according to the manufacturer’s instructions.
- Smoke the chicken for about 3-4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Once done, remove the chicken from the smoker and let it rest for 15-20 minutes before carving.
Notes
- For best results, brine the chicken in a saltwater solution for a few hours before applying the rub.
- Experiment with different wood chips to find your preferred flavor.
- Leftover smoked chicken can be used in salads, sandwiches, or as a topping for pizza.
