- 1 whole chicken (about 4–5 pounds)
- 2 tablespoons olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional)
- Wood chips for smoking (hickory, apple, or cherry recommended)
Instructions
- Prepare the chicken by removing any giblets and patting it dry with paper towels.
- In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper to create a rub.
- Rub the spice mixture all over the chicken, making sure to get under the skin for maximum flavor.
- Preheat your smoker to 250°F (120°C) and add your choice of wood chips.
- Place the chicken on the smoker, breast side up, and smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
