  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • Wood chips for smoking (hickory, apple, or cherry recommended)

Instructions

  1. Prepare the chicken by removing any giblets and patting it dry with paper towels.
  2. In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper to create a rub.
  3. Rub the spice mixture all over the chicken, making sure to get under the skin for maximum flavor.
  4. Preheat your smoker to 250°F (120°C) and add your choice of wood chips.
  5. Place the chicken on the smoker, breast side up, and smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  6. Once done, remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
