Ingredients

  • 2 pounds baby potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly. Once cool enough to handle, gently smash each potato with a fork or your hand, leaving them chunky.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.
  4. Add the smashed potatoes to the bowl with the dressing and gently mix until the potatoes are coated.
  5. Fold in the chopped chives and parsley, adjusting seasoning with additional salt and pepper as needed.
  6. Serve the smashed potato salad warm or chilled.

Notes

  • For added flavor, you can mix in some crispy bacon bits or diced pickles.
