- 2 pounds baby potatoes
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- In a large pot, bring salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. Once cool enough to handle, gently smash each potato with a fork or your hand, leaving them chunky.
- In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper until well combined.
- Add the smashed potatoes to the bowl with the dressing and gently mix until the potatoes are coated.
- Fold in the chopped chives and parsley, adjusting seasoning with additional salt and pepper as needed.
- Serve the smashed potato salad warm or chilled.
Notes
- For added flavor, you can mix in some crispy bacon bits or diced pickles.
