- 1 prime rib roast (5–7 pounds)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 200°F (93°C).
- Pat the prime rib dry with paper towels.
- Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the roast on a rack in a roasting pan.
- Insert a meat thermometer into the thickest part of the roast.
- Roast in the oven until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove the roast from the oven and let it rest for 20-30 minutes before slicing.
Notes
- Adjust cooking time based on the size of the roast.
- For a crustier exterior, sear the roast at high heat for 20 minutes before reducing the temperature.
