Instructions

  1. Preheat your oven to 200°F (93°C).
  2. Pat the prime rib dry with paper towels.
  3. Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  4. Place the roast on a rack in a roasting pan.
  5. Insert a meat thermometer into the thickest part of the roast.
  6. Roast in the oven until the internal temperature reaches 130°F (54°C) for medium-rare.
