Ingredients

- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 cup beef broth
- 2 tbsp lime juice
- 8 corn tortillas
Instructions
- Heat olive oil in a pan over medium-high heat. Sear the beef on all sides until browned.
- Place the beef in the slow cooker. Add onion, garlic, salt, pepper, cumin, chili powder, and paprika.
- Pour beef broth and lime juice over the beef.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Shred the beef with two forks.
- Serve on warm tortillas with your favorite toppings.

- Use a lean cut of beef for less fat.
- Adjust spices to your taste.
- Store leftovers in an airtight container for up to 3 days.
