Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
  2. Add carrots, potatoes, onion, and garlic to the slow cooker.
  3. In a separate bowl, mix together the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and vegetables in the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.

Notes

  • You can add other vegetables like peas or green beans in the last hour of cooking.
  • For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it in for the last 30 minutes of cooking.
