Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 medium carrots, sliced
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- In a separate bowl, mix together the beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- Serve hot and enjoy your hearty beef stew!
Notes
- You can add other vegetables like peas or green beans in the last hour of cooking.
- For a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it in for the last 30 minutes of cooking.
