- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh rosemary (or 1 teaspoon dried)
- 2 sprigs fresh thyme (or 1 teaspoon dried)
Instructions
- Season the chuck roast with salt and black pepper on all sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Transfer the roast to the slow cooker. Add the chopped onion, garlic, carrots, and potatoes around the roast.
- In a bowl, mix together the beef broth and Worcestershire sauce. Pour the mixture over the roast and vegetables.
- Add the rosemary and thyme on top.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and falls apart easily.
- Once done, remove the roast and vegetables from the slow cooker and let rest for a few minutes before slicing.
- Serve with the cooking liquid as a gravy.
Notes
- For added flavor, you can marinate the roast overnight with your favorite seasonings.
- Feel free to add other vegetables like celery or parsnips to the mix.
- Leftovers can be stored in the refrigerator for up to 3 days.
