Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 2 sprigs fresh thyme (or 1 teaspoon dried)

Instructions

  1. Season the chuck roast with salt and black pepper on all sides.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
  3. Transfer the roast to the slow cooker. Add the chopped onion, garlic, carrots, and potatoes around the roast.
  4. In a bowl, mix together the beef broth and Worcestershire sauce. Pour the mixture over the roast and vegetables.
  5. Add the rosemary and thyme on top.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and falls apart easily.
  7. Once done, remove the roast and vegetables from the slow cooker and let rest for a few minutes before slicing.
  8. Serve with the cooking liquid as a gravy.

Notes

  • For added flavor, you can marinate the roast overnight with your favorite seasonings.
  • Feel free to add other vegetables like celery or parsnips to the mix.
  • Leftovers can be stored in the refrigerator for up to 3 days.
