- 1 can (13.5 oz) coconut milk
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, sliced
- 1/2 cup chicken broth
- 1 tbsp lime juice
- 1/2 tsp red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
- 1/4 cup chopped peanuts (for garnish)
Instructions
- Place chicken thighs in the slow cooker.
- In a bowl, whisk coconut milk, peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes until smooth.
- Pour the sauce over the chicken and add bell pepper slices.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken with two forks and stir in lime juice.
- Serve over rice, garnished with green onions and chopped peanuts.
Notes
- Use full-fat coconut milk for a richer sauce.
- Adjust honey for sweetness or red pepper flakes for heat.
