Description

A flavorful and tender beef dish cooked slowly with Moroccan spices.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup beef broth
  • 1/4 cup dried apricots, chopped
  • 1/4 cup raisins
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef on all sides, then transfer to the slow cooker.
  2. In the same skillet, sauté onions and garlic until soft, about 3 minutes.
  3. Add cumin, coriander, cinnamon, paprika, ginger, turmeric, and cayenne pepper. Stir for 30 seconds.
  4. Pour the mixture over the beef in the slow cooker.
  5. Add beef broth, apricots, and raisins. Stir well.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  7. Season with salt and pepper.
  8. Garnish with fresh cilantro before serving.

Notes

  • Serve with couscous or rice.
  • Adjust cayenne pepper for desired spiciness.
  • For extra flavor, add a squeeze of lemon juice before serving.
