A flavorful and tender beef dish cooked slowly with Moroccan spices.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 cup beef broth
- 1/4 cup dried apricots, chopped
- 1/4 cup raisins
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef on all sides, then transfer to the slow cooker.
- In the same skillet, sauté onions and garlic until soft, about 3 minutes.
- Add cumin, coriander, cinnamon, paprika, ginger, turmeric, and cayenne pepper. Stir for 30 seconds.
- Pour the mixture over the beef in the slow cooker.
- Add beef broth, apricots, and raisins. Stir well.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Serve with couscous or rice.
- Adjust cayenne pepper for desired spiciness.
- For extra flavor, add a squeeze of lemon juice before serving.
