- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 4 cups low-sodium vegetable broth
- 1 cup small pasta (like ditalini or elbow)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups fresh spinach or kale, chopped
Instructions
- Layer hard vegetables like carrots and potatoes at the bottom of the slow cooker.
- Add chopped celery and onion on top of the hard vegetables.
- Stir in minced garlic, diced tomatoes, kidney beans, and cannellini beans.
- Pour in the vegetable broth and add dried oregano and dried basil.
- Season with salt and pepper to taste.
- Cover and cook on low for 8 hours or high for 4 hours.
- During the last 30 minutes of cooking, add the chopped spinach or kale.
- Taste the soup and adjust seasoning if necessary before serving.
