- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1/2 cup chopped fresh parsley (for garnish)
Instructions
- Place chicken breasts in the slow cooker.
- Add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, oregano, salt, and pepper.
- Drizzle olive oil over the mixture.
- Cover and cook on low for 4-5 hours or until chicken is tender and rice is cooked.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
Notes
- For extra flavor, sear the chicken in a pan before adding to the slow cooker.
- Adjust salt and pepper to taste.
- Substitute brown rice for white rice, but note it may require a longer cooking time.
