- 6 large onions, sliced
- 4 cups low-sodium beef broth
- 1 cup dry white wine
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon fresh thyme
- 1 bay leaf
- 1 French baguette, sliced
- 2 cups Gruyère cheese, shredded
Instructions
- Slice the onions and place them in the slow cooker.
- Add the olive oil, butter, salt, and sugar to the onions.
- Stir to combine the ingredients well.
- Cover the slow cooker and cook on low for 6 hours, stirring occasionally.
- After 6 hours, add the beef broth, white wine, thyme, and bay leaf to the slow cooker.
- Stir to combine all the ingredients.
- Cover and cook on low for an additional 1 hour.
- While the soup is cooking, preheat your oven to 350°F (175°C).
- Place the sliced baguette on a baking sheet and toast in the oven until golden brown.
- Remove the bay leaf from the soup before serving.
- Ladle the soup into bowls and top with toasted baguette slices.
- Sprinkle shredded Gruyère cheese on top of each bowl.
- Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden.
