- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add onion, bell pepper, and garlic to the skillet. Cook until softened.
- Transfer the beef mixture to the slow cooker.
- Add kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Stir to combine.
- Cook on low for 4-5 hours or on high for 2-3 hours.
- Sprinkle shredded cheese on top and cook for an additional 10 minutes until melted.
Notes
- For extra flavor, add a dash of hot sauce.
- You can substitute ground turkey for a lighter version.
- Serve with tortilla chips or cornbread.
