Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Brown ground beef in a skillet over medium heat. Drain excess fat.
  2. Add onion, bell pepper, and garlic to the skillet. Cook until softened.
  3. Transfer the beef mixture to the slow cooker.
  4. Add kidney beans, corn, diced tomatoes, chili powder, cumin, salt, and black pepper. Stir to combine.
  5. Cook on low for 4-5 hours or on high for 2-3 hours.
  6. Sprinkle shredded cheese on top and cook for an additional 10 minutes until melted.

Notes

  • For extra flavor, add a dash of hot sauce.
  • You can substitute ground turkey for a lighter version.
