- 1 tablespoon olive oil
- 2 cups beef broth
- 1 onion, chopped
- 4 carrots, cut into chunks
- 3 potatoes, diced

- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Sear the chuck roast on all sides until browned.
- Place the roast in the slow cooker.
- Add beef broth, onion, carrots, potatoes, garlic, thyme, salt, and pepper.
- Cover and cook on low for 8 hours or until the meat is tender.
- Remove the roast and let it rest before slicing.
- Serve with vegetables and gravy.
