Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 4 carrots, chopped
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 potatoes, cubed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and brown chicken thighs.
  2. Place chicken in slow cooker.
  3. Add carrots, celery, onion, garlic, and potatoes.
  4. Pour chicken broth over ingredients.
  5. Sprinkle thyme, rosemary, salt, and pepper.
  6. Cover and cook on low for 6 hours.
  7. Shred chicken slightly before serving.
