A hearty and comforting slow cooker chicken stew packed with tender chicken, vegetables, and rich flavors.
Ingredients

- 1.5 lbs (680g) boneless, skinless chicken thighs, cut into chunks
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups (950ml) chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
Instructions
- Place chicken, carrots, celery, onion, and garlic in the slow cooker.
- Add chicken broth, thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- If you prefer a thicker stew, mix cornstarch with water and stir into the stew in the last 30 minutes of cooking.
- Remove bay leaf before serving.
Notes
- For extra flavor, brown the chicken in a pan before adding to the slow cooker.
- You can add potatoes or other root vegetables if preferred.
- Store leftovers in an airtight container in the fridge for up to 3 days.
