- 2 lbs boneless, skinless chicken thighs
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1/4 cup fresh lemon juice
- Pita bread, for serving
- Tzatziki sauce, for serving
- Sliced cucumbers, tomatoes, and red onion, for garnish
Instructions
- In a bowl, combine olive oil, minced garlic, oregano, cumin, salt, black pepper, smoked paprika, and lemon juice. Mix well.
- Place chicken thighs in the slow cooker and pour the marinade over them. Toss to coat the chicken evenly.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and mix it with the juices in the slow cooker.
- Serve the shredded chicken in pita bread, topped with tzatziki sauce, cucumbers, tomatoes, and red onion.
Notes
- For extra flavor, marinate the chicken in the mixture for 1-2 hours before cooking.
- You can also grill the chicken after slow cooking for a few minutes to get a charred texture.
