  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/4 cup fresh lemon juice
  • Pita bread, for serving
  • Tzatziki sauce, for serving
  • Sliced cucumbers, tomatoes, and red onion, for garnish

Instructions

  1. In a bowl, combine olive oil, minced garlic, oregano, cumin, salt, black pepper, smoked paprika, and lemon juice. Mix well.
  2. Place chicken thighs in the slow cooker and pour the marinade over them. Toss to coat the chicken evenly.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken using two forks and mix it with the juices in the slow cooker.
  5. Serve the shredded chicken in pita bread, topped with tzatziki sauce, cucumbers, tomatoes, and red onion.

Notes

  • For extra flavor, marinate the chicken in the mixture for 1-2 hours before cooking.
  • You can also grill the chicken after slow cooking for a few minutes to get a charred texture.
