Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 large carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp tomato paste
  • 2 tbsp flour (optional, for thickening)

Instructions

  1. Place beef, potatoes, carrots, onion, and garlic in the slow cooker.
  2. In a bowl, whisk together beef broth, salt, pepper, thyme, and tomato paste.
  3. Pour the broth mixture over the ingredients in the slow cooker.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. If a thicker stew is desired, mix flour with a little water and stir into the stew 30 minutes before serving.
