- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Fresh parsley for garnish
Instructions
- In a large bowl, toss beef cubes with flour, salt, and pepper until evenly coated.
- Place the beef in the slow cooker and add the broth, carrots, potatoes, onions, garlic, Worcestershire sauce, thyme, rosemary, and bay leaf.
- Stir to combine all ingredients.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- Discard the bay leaf before serving.
- Garnish with fresh parsley and enjoy!
Notes
- For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
