Description
A rich and flavorful slow-cooked Moroccan beef tagine with tender meat and aromatic spices.
Ingredients

- 1.5 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tbsp ras el hanout spice blend
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 cinnamon stick
- 1 cup beef broth
- 1 (14 oz) can diced tomatoes
- 1 cup dried apricots, halved
- 1/2 cup pitted green olives
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot or tagine over medium heat. Brown the beef cubes on all sides, then remove and set aside.
- Add onion, garlic, and ginger to the pot. Cook until softened, about 5 minutes.
- Stir in ras el hanout, cumin, coriander, turmeric, paprika, and cinnamon stick. Cook for 1 minute until fragrant.
- Pour in beef broth and diced tomatoes. Scrape the bottom of the pot to deglaze.
- Return beef to the pot. Cover and simmer on low heat for 2 hours.
- Add apricots and olives. Cook for another 30 minutes until beef is tender.
- Season with salt and pepper. Garnish with fresh herbs before serving.
Notes
- For a thicker sauce, remove the lid during the last 30 minutes of cooking.
- Serve with couscous or crusty bread.
- Leftovers taste even better the next day.
