- 1.5 lbs skirt steak
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, salt, and pepper.
- Place the skirt steak in a resealable plastic bag or a shallow dish and pour the marinade over the steak. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, up to 2 hours.
- Preheat your grill to high heat.
- Remove the steak from the marinade and let excess marinade drip off. Discard the marinade.
- Grill the skirt steak for about 3-4 minutes on each side for medium-rare, depending on the thickness.
- Remove from the grill and let it rest for 5 minutes before slicing against the grain.
- Garnish with fresh cilantro and serve.
