Ingredients

  • 1.5 lbs skirt steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, salt, and pepper.
  2. Place the skirt steak in a resealable plastic bag or a shallow dish and pour the marinade over the steak. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, up to 2 hours.
  3. Preheat your grill to high heat.
  4. Remove the steak from the marinade and let excess marinade drip off. Discard the marinade.
  5. Grill the skirt steak for about 3-4 minutes on each side for medium-rare, depending on the thickness.
  6. Remove from the grill and let it rest for 5 minutes before slicing against the grain.
  7. Garnish with fresh cilantro and serve.
