Ingredients

  • 2 medium zucchini, spiralized

  • 1/4 cup white wine

  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add garlic and red pepper flakes, sauté for 30 seconds.
  3. Add shrimp and cook for 2 minutes per side until pink.
  4. Remove shrimp from skillet and set aside.
  5. Add white wine and chicken broth to the skillet, simmer for 2 minutes.
  6. Add zucchini noodles and toss to coat, cooking for 2-3 minutes until tender.
  7. Return shrimp to the skillet and mix with zucchini noodles.
  8. Add lemon juice and parsley, season with salt and pepper.
