Description

- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or spaghetti
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- Juice of 1 lemon
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook the linguine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the butter and olive oil over medium heat.
- Add the minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and season with salt and pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side.
- Pour in the white wine and lemon juice. Bring to a simmer and cook for another 2 minutes.
- Toss in the cooked pasta and mix until well coated in the sauce.
- Remove from heat and garnish with chopped parsley. Serve with grated Parmesan cheese if desired.
Notes
- Feel free to add vegetables like spinach or cherry tomatoes for extra flavor.
- For a low-carb option, you can serve the shrimp scampi over zucchini noodles.
