Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese for serving (optional)

  1. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the minced garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
  4. Add the shrimp to the skillet and season with salt and pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side.
  5. Pour in the white wine and lemon juice. Bring to a simmer and cook for another 2 minutes.
  6. Toss in the cooked pasta and mix until well coated in the sauce.
  7. Remove from heat and garnish with chopped parsley. Serve with grated Parmesan cheese if desired.

Notes

  • Feel free to add vegetables like spinach or cherry tomatoes for extra flavor.
  • For a low-carb option, you can serve the shrimp scampi over zucchini noodles.
