Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. Season shrimp with salt and pepper. Cook in a skillet over medium heat for 2-3 minutes per side until pink. Let cool.
