- 8 oz pasta (penne or rotini)
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- Season shrimp with salt and pepper. Cook in a skillet over medium heat for 2-3 minutes per side until pink. Let cool.
- In a large bowl, combine pasta, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
- Whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper in a small bowl.
- Pour dressing over the salad and toss to coat evenly.
- Chill for at least 30 minutes before serving.
