Ingredients

  • 2 avocados, sliced
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a bowl, combine mango, red onion, jalapeño, cilantro, and half the lime juice to make the salsa. Set aside.
  2. Heat olive oil in a pan over medium heat. Add shrimp, chili powder, salt, and pepper. Cook until shrimp turn pink, about 3-4 minutes.
  3. Whisk remaining lime juice with a pinch of chili powder to make the lime-chili sauce.
  4. Assemble bowls with avocado slices, cooked shrimp, and mango salsa. Drizzle with lime-chili sauce.
