- 1 cup grits (stone-ground preferred)
- 4 cups water
- 1 cup milk
- 4 tablespoons butter (divided)
- 1 cup cheddar cheese (shredded)
- 1 pound shrimp (peeled and deveined)
- 2 cloves garlic (minced)
- 1 tablespoon cajun seasoning
- 4 slices bacon (cooked and crumbled)
- 2 green onions (sliced, for garnish)
Instructions
- In a medium saucepan, bring water to a boil. Stir in grits and reduce heat to low. Cook, stirring occasionally, until thickened, about 20-25 minutes.
- Stir in milk, 2 tablespoons of butter, and cheddar cheese until creamy. Season with salt and pepper to taste.
- In a large skillet, melt remaining butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add shrimp and cajun seasoning to the skillet. Cook until shrimp are pink and cooked through, about 3-5 minutes.
- To serve, spoon grits into bowls, top with shrimp mixture, crumbled bacon, and garnish with sliced green onions.
