Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 jalapeño, sliced (optional)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sour cream
  • 1/4 cup guacamole
  • 1/4 cup salsa
  • Olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked, about 5 to 7 minutes. Drain excess fat.
  3. Add taco seasoning to the beef and follow package instructions (usually adding water and simmering).
  4. On a large sheet pan, spread a layer of tortilla chips.
  5. Evenly distribute the seasoned ground beef over the chips.
  6. Sprinkle black beans and corn on top of the beef.
  7. Cover with shredded cheddar cheese.
  8. Add jalapeño slices if using.
  9. Bake in the preheated oven for about 10 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven and add diced tomatoes and green onions on top.
  11. Serve immediately with sour cream, guacamole, and salsa on the side.

Notes

  • Feel free to customize toppings like olives, peppers, or different cheeses.
  • For extra crunch, add fresh toppings like lettuce or avocado after baking.
  • Make it vegetarian by substituting ground beef with black beans or lentils.
