- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix melted butter, garlic, thyme, paprika, salt, and pepper.
- Toss chicken breasts in half of the garlic butter mixture.
- Arrange chicken on a sheet pan.
- Toss veggies with olive oil, salt, and pepper, then spread around the chicken.
- Drizzle remaining garlic butter over the chicken and veggies.
- Bake for 25-30 minutes until chicken is cooked through and veggies are tender.
- Serve immediately.

- Use a meat thermometer to ensure chicken reaches 165°F.
