This chicken shawarma recipe delivers juicy, marinated chicken that’s packed with flavor, perfect for serving in wraps, salads, or on its own.

- 1 lb boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 4 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper, to taste
- Pita bread or wraps, for serving
- Toppings: sliced tomatoes, cucumbers, red onion, tahini sauce, or yogurt
Instructions
- In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, minced garlic, lemon juice, salt, and pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade.
- Grill the chicken for 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
- Serve the chicken in pita bread or wraps, and add desired toppings such as sliced tomatoes, cucumbers, red onion, tahini sauce, or yogurt.
Notes
- For extra flavor, marinate the chicken thighs overnight.
- You can also cook the chicken in a skillet over medium-high heat for a similar result if you don’t have a grill.
