Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Pita bread or wraps, for serving
  • Toppings: sliced tomatoes, cucumbers, red onion, tahini sauce, or yogurt

Instructions

  1. In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, minced garlic, lemon juice, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade.
  4. Grill the chicken for 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. Serve the chicken in pita bread or wraps, and add desired toppings such as sliced tomatoes, cucumbers, red onion, tahini sauce, or yogurt.

Notes
