- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon ground paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh parsley, for garnish
Instructions
- In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, pepper, and lemon juice to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
- Cook the chicken for about 6-7 minutes on each side or until fully cooked and charred, with an internal temperature of 165°F (74°C).
- Remove from heat and let the chicken rest for 5 minutes. Slice into thin strips.
- Serve in wraps, salads, or over rice, garnished with fresh parsley.
