Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 tablespoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper, salt, pepper, and lemon juice to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off.
  4. Cook the chicken for about 6-7 minutes on each side or until fully cooked and charred, with an internal temperature of 165°F (74°C).
  5. Remove from heat and let the chicken rest for 5 minutes. Slice into thin strips.
  6. Serve in wraps, salads, or over rice, garnished with fresh parsley.
