- 4 medium zucchinis, thinly shaved
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup toasted pine nuts (optional)
- Fresh basil leaves for garnish
Instructions
- In a large bowl, combine the shaved zucchini.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.
- Pour the lemon vinaigrette over the zucchini and toss gently to coat evenly.
- If desired, sprinkle with grated Parmesan cheese and toasted pine nuts.
- Garnish with fresh basil leaves before serving.
Notes
- For best results, use a mandoline slicer to achieve thin, even shavings of zucchini.
- This salad can be served immediately or chilled for 30 minutes to allow the flavors to meld.
