Description

A simple and delicious dish featuring seared cod served with a fresh tomato and basil sauce.


Ingredients

  • 2 cod fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Sear cod for 3-4 minutes per side until golden and cooked through. Remove from pan.
  4. In the same pan, sauté garlic for 30 seconds.
  5. Add cherry tomatoes and cook for 2-3 minutes until softened.
  6. Stir in basil and lemon juice.
  7. Pour the sauce over the cod and serve.
