- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups seafood stock or fish broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 pound shrimp, peeled and deveined
- 1 pound white fish fillets, cut into chunks
- 1 cup green peas (fresh or frozen)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
- Add carrots, celery, and bell pepper, cooking for about 5 minutes until softened.
- Stir in diced tomatoes, seafood stock, thyme, and oregano. Bring to a simmer.
- Add shrimp and fish to the pot, cooking until shrimp are pink and fish is cooked through (about 5-7 minutes).
- Stir in green peas and season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- Feel free to add your favorite seafood such as mussels or clams.
- Serve with crusty bread for a complete meal.
