Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups seafood stock or fish broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 pound shrimp, peeled and deveined
  • 1 pound white fish fillets, cut into chunks
  • 1 cup green peas (fresh or frozen)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sautéing until translucent.
  2. Add carrots, celery, and bell pepper, cooking for about 5 minutes until softened.
  3. Stir in diced tomatoes, seafood stock, thyme, and oregano. Bring to a simmer.
  4. Add shrimp and fish to the pot, cooking until shrimp are pink and fish is cooked through (about 5-7 minutes).
  5. Stir in green peas and season with salt and pepper to taste.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

  • Feel free to add your favorite seafood such as mussels or clams.
  • Serve with crusty bread for a complete meal.
  • Adjust seasoning as necessary to suit your taste.
