Delicious and easy seafood foil packets perfect for grilling or baking. Packed with fresh seafood and vegetables, these foil packets are a great way to enjoy a flavorful meal with minimal cleanup.


Ingredients

  • 1 lb shrimp
  • 1 lb scallops
  • 1 medium zucchini
  • 1 bell pepper
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 lemon
  • 1 tsp Italian seasoning
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley

Instructions

  1. Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  2. In a large bowl, combine shrimp, scallops, zucchini, bell pepper, cherry tomatoes, olive oil, garlic, lemon juice, Italian seasoning, salt, and black pepper. Toss well to coat.
  3. Cut large pieces of aluminum foil and lay them flat. Divide the seafood mixture evenly onto the center of each foil piece.
  4. Fold the edges of the foil over the seafood to create a sealed packet.
  5. Place the foil packets on the grill or in the oven. Cook for 15-20 minutes until the seafood is cooked through and vegetables are tender.
  6. Carefully open the packets (steam will escape) and garnish with fresh parsley before serving.
