- 1 lb shrimp
- 1 lb scallops
- 1 medium zucchini
- 1 bell pepper
- 1 cup cherry tomatoes
- 3 tbsp olive oil
- 3 cloves garlic
- 1 lemon
- 1 tsp Italian seasoning
- to taste salt
- to taste black pepper
- for garnish fresh parsley
Instructions
- Preheat the grill to medium-high heat or the oven to 400°F (200°C).
- In a large bowl, combine shrimp, scallops, zucchini, bell pepper, cherry tomatoes, olive oil, garlic, lemon juice, Italian seasoning, salt, and black pepper. Toss well to coat.
- Cut large pieces of aluminum foil and lay them flat. Divide the seafood mixture evenly onto the center of each foil piece.
- Fold the edges of the foil over the seafood to create a sealed packet.
- Place the foil packets on the grill or in the oven. Cook for 15-20 minutes until the seafood is cooked through and vegetables are tender.
- Carefully open the packets (steam will escape) and garnish with fresh parsley before serving.
