- 2 medium zucchinis
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped fresh herbs (dill or parsley)
- Oil for frying
Instructions
- Shred the zucchini and place it in a bowl.
- Sprinkle the salt over the shredded zucchini and let it sit for about 10-15 minutes to draw out excess moisture.
- After 10-15 minutes, squeeze the zucchini to remove as much moisture as possible.
- In a large mixing bowl, combine the drained zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and chopped herbs.
- Mix the ingredients until well combined.
- Heat oil in a frying pan over medium heat.
- Once the oil is hot, scoop spoonfuls of the zucchini mixture and carefully place them in the pan.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel to drain excess oil.
- Serve hot, cold, or reheated as desired.
