Ingredients

- 1 lb Italian sausage, casings removed
- 1 bunch kale, stems removed and chopped
- 1 lb potato gnocchi
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sausage and cook until browned, breaking it into small pieces.
- Add onion and garlic, cook until softened (about 3 minutes).
- Stir in kale and cook until wilted.
- Pour in chicken broth and bring to a simmer.
- Add gnocchi and cook until they float (about 3 minutes).
- Season with salt, black pepper, and red pepper flakes if using.
- Sprinkle with Parmesan cheese before serving.
Notes
- Use spicy sausage for extra heat.
- Substitute spinach if kale isn’t available.
- Add a splash of cream for a richer dish.
