Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 bunch kale, stems removed and chopped
  • 1 lb potato gnocchi
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook until browned, breaking it into small pieces.
  3. Add onion and garlic, cook until softened (about 3 minutes).
  4. Stir in kale and cook until wilted.
  5. Pour in chicken broth and bring to a simmer.
  6. Add gnocchi and cook until they float (about 3 minutes).
  7. Season with salt, black pepper, and red pepper flakes if using.
  8. Sprinkle with Parmesan cheese before serving.

Notes

  • Use spicy sausage for extra heat.
  • Substitute spinach if kale isn’t available.
