Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, parsley, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Once quinoa is cooked, let it cool slightly and then add it to the vegetable mixture.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.
