S’mores Brownies with Torched Meringue: Irresistible Dessert in 30 Minutes

Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)
  • 1 teaspoon vanilla extract (for meringue)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  6. Pour the brownie batter into the prepared baking dish and spread evenly.
  7. Sprinkle mini marshmallows and graham cracker crumbs on top of the brownie batter.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. While the brownies are baking, prepare the meringue. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  10. Gradually add the granulated sugar and continue to beat until stiff peaks form. Stir in the vanilla extract.
  11. Once the brownies are done baking, remove them from the oven and immediately spread the meringue over the top.
  12. Using a kitchen torch, carefully toast the meringue until golden brown. Allow the brownies to cool before slicing and serving.

Notes

  • For a more intense chocolate flavor, you can use dark chocolate cocoa powder.
  • If you don’t have a kitchen torch, you can place the brownies under a broiler for a few minutes to toast the meringue, but watch carefully to avoid burning.
  • Store any leftovers in an airtight container at room temperature for up to 2 days.
