- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup graham cracker crumbs
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar (for meringue)
- 1 teaspoon vanilla extract (for meringue)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Pour the brownie batter into the prepared baking dish and spread evenly.
- Sprinkle mini marshmallows and graham cracker crumbs on top of the brownie batter.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- While the brownies are baking, prepare the meringue. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add the granulated sugar and continue to beat until stiff peaks form. Stir in the vanilla extract.
- Once the brownies are done baking, remove them from the oven and immediately spread the meringue over the top.
- Using a kitchen torch, carefully toast the meringue until golden brown. Allow the brownies to cool before slicing and serving.
Notes
- For a more intense chocolate flavor, you can use dark chocolate cocoa powder.
- If you don’t have a kitchen torch, you can place the brownies under a broiler for a few minutes to toast the meringue, but watch carefully to avoid burning.
- Store any leftovers in an airtight container at room temperature for up to 2 days.
