Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix flour and salt in a bowl. Cut in cold butter until crumbly.
  3. Gradually add ice water, 1 tablespoon at a time, until dough forms.
  4. Roll dough into a circle on a floured surface.
  5. Transfer dough to a baking sheet lined with parchment paper.
  6. Toss pear slices with honey, lemon juice, and cinnamon.
  7. Arrange pears in the center of the dough, leaving a 2-inch border.
  8. Fold edges of dough over the pears, pleating as needed.
  9. Brush dough with egg wash and sprinkle with coarse sugar.
