Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add diced onions and bell peppers, cooking until softened, about 5 minutes.
- Add the shredded rotisserie chicken to the skillet and pour in the barbecue sauce. Stir to combine and heat through.
- Transfer the chicken mixture to a baking dish. Sprinkle shredded cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, season with salt and pepper, and garnish with fresh herbs if desired. Serve warm.
