- 8 small corn tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup sour cream or Greek yogurt
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a bowl, combine the shredded rotisserie chicken with lime juice, salt, and pepper. Mix well.
- Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a generous amount of the chicken mixture on each tortilla.
- Top with shredded lettuce, diced tomatoes, red onion, cheese, and cilantro.
- Drizzle sour cream on top and serve immediately.
