A simple and flavorful dish featuring roasted red potatoes and asparagus.
Ingredients

- 1 lb red potatoes, diced
- 1 lb asparagus, trimmed
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced potatoes with 2 tablespoons of olive oil, garlic powder, salt, pepper, and rosemary.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 20 minutes.
- While the potatoes are roasting, toss the asparagus with the remaining olive oil and a pinch of salt.
- Add the asparagus to the baking sheet and roast for an additional 15 minutes.
- Remove from the oven and serve hot.
Notes
- Adjust seasoning to taste.
- For extra flavor, add lemon juice before serving.
- Great as a side dish for meat or fish.
