- 1 pound red potatoes, quartered
- 1 pound yellow potatoes, quartered
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the quartered potatoes.
- Add olive oil, salt, pepper, garlic powder, and rosemary.
- Toss to coat the potatoes evenly.
- Spread the potatoes on a baking sheet in a single layer.
- Roast in the oven for 30-35 minutes, or until golden brown and crispy.
- Stir halfway through cooking for even roasting.
- Remove from oven and serve hot.
