- 2 pounds Yukon Gold potatoes
- 1 head of garlic
- 1/2 cup warm milk
- 4 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the top off the head of garlic to expose the cloves.
- Wrap the garlic in aluminum foil and roast in the oven for about 30-35 minutes until soft.
- While the garlic is roasting, peel and chop the Yukon Gold potatoes into even chunks.
- Place the chopped potatoes in a large pot and cover with cold water.
- Add a pinch of salt to the water and bring to a boil.
- Cook the potatoes for about 15-20 minutes until fork-tender.
- Drain the potatoes and return them to the pot.
- Squeeze the roasted garlic cloves out of their skins and add them to the potatoes.
- Add the warm milk and butter to the pot.
- Mash the potatoes until smooth and creamy.
- Season with salt and pepper to taste, mixing well.
