- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 lemon, halved
- 4 garlic cloves, crushed
- Fresh herbs (such as rosemary or thyme), for stuffing
- Vegetables for roasting (carrots, potatoes, onions), optional
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels. This helps to achieve crispy skin.
- Rub the olive oil all over the chicken, then season generously with salt and pepper, including inside the cavity.
- Stuff the cavity with lemon halves, crushed garlic, and fresh herbs.
- If using, place chopped vegetables in the bottom of a roasting pan. This will add flavor and serve as a side dish.
- Place the chicken on top of the vegetables or directly in the roasting pan.
- Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving. This helps keep the juices in.
- Serve with your choice of sides and enjoy!
Notes
- For extra crispy skin, consider spatchcocking the chicken (removing the backbone) before roasting.
- You can also add spices or marinades according to your taste preference.
