Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • Fresh herbs (such as rosemary or thyme), for stuffing
  • Vegetables for roasting (carrots, potatoes, onions), optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels. This helps to achieve crispy skin.
  3. Rub the olive oil all over the chicken, then season generously with salt and pepper, including inside the cavity.
  4. Stuff the cavity with lemon halves, crushed garlic, and fresh herbs.
  5. If using, place chopped vegetables in the bottom of a roasting pan. This will add flavor and serve as a side dish.
  6. Place the chicken on top of the vegetables or directly in the roasting pan.
  7. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving. This helps keep the juices in.
  9. Serve with your choice of sides and enjoy!

  • For extra crispy skin, consider spatchcocking the chicken (removing the backbone) before roasting.
