Description

Ingredients

  • 1 whole chicken (34 lbs)
  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 1 small onion, quartered

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Mix butter, garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Pat chicken dry and rub herb butter under and over the skin.
  4. Place lemon halves and onion inside the chicken cavity.
  5. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  6. Rest for 10 minutes before carving.

Notes

  • Use room-temperature butter for easier spreading.
  • Let the chicken rest to retain juices.
  • Check doneness with a meat thermometer.
