Ingredients

- 1 cup brown rice
- 2 cups water
- 1 cup mixed vegetables (carrots, bell peppers, broccoli)
- 1 cup cooked chicken or tofu
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Rinse the brown rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- In a skillet, heat olive oil over medium heat.
- Add mixed vegetables and sauté until tender.
- Stir in cooked chicken or tofu.
- Add soy sauce, salt, and pepper. Mix well.
- Serve the vegetable mixture over the cooked rice.
Notes
- Substitute brown rice with quinoa for a different flavor.
- Use any vegetables you prefer.
