- 1 pound ground beef
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 can (15 ounces) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
- Add ground beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain excess fat.
- Stir in uncooked rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle shredded cheddar cheese on top.
- Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to add vegetables like bell peppers or corn for extra nutrition.
- You can substitute brown rice for white rice, but adjust the cooking time accordingly.
- For a spicier kick, add diced jalapeños or a dash of hot sauce.
